Thinking of Spring

Hmmm I can almost taste the fresh greens of spring.  Today I finally stuck my nose out the door after being laid up with a hurt knee for the past week and half, and although there are still piles of snow blanketing the backyard and someone cautioned that there is probably still snow in the forecast I can feel spring in the air.  With that in mind, when I came into the office this morning and found the latest Hobby Farm magazine on my desk I couldn’t resist stopping to take a peek.  I discovered a recipe that I can’t help but share.  In anticipation of spring and the asparagus greens that will be popping out of the soil here is a dish to get your taste buds ready!  I haven’t tried it myself but I am going to have to.  Enjoy!
